Deceptively Delicious

I saw an Oprah show last fall, and she had jessica Seinfeld on to talk about her book "Deceptively delicious". It is a cookbook that gives recipes to cook for your children using vegetable puree's in a large variety of food's so kids will get the nutrition without whining and crying about every meal. I started researching the idea and was fortunate to get the book for christmas and fell in love with the concept. I have been stressing over the fact that my 3 year old doesn't get the proper nutrition because he is such a picky eater. the book has all kinds of information about what nutrients are found in what fruit and vegi's.
I cook a lot as a whole and so after reading the recipes I could kind of develop my own and just the puree's into just about anything I cooked with out my husband or kids being able to tel the difference. Jessica on the show said she will steam and puree a large amount of vegi's and put them in small freezer bags and then she could just pull out what she needed to make her meal.
Some ideas on what vegi's to put into what foods that I have done are as follows:
-pureed green beans or carrots in chicken noodle soup
-pureed red sweet peppers in pasta sauces
-pureed spinach and red beets in chilli
-pureed cauliflower in mashed potatoes
-pureed sweet potatoes in macaroni and cheese

The possibilities are endless I make my chilli with lots of vegi's and my husband and kids love it. I also have a friend who is not fond of chilli or vegetables and she loved it and did not know that there as many vegetables in my chilli till I told her.

Fabulous chilli:
1 1/2 lbs. ground chuck
1/2 cp. chopped onions browned
3 cloves garlic finely chopped
2cps stewed tomatoes pureed in a blender juice too
1 can red beets drained pureed in the blender
1 can green beans pureed with the juice
1 lg roasted red sweet pepper pureed
1 cp pureed spinach
1 can black beans drained left whole

Then I use the chilli seasoning packets or sometimes season it with a variety of my own spices. This truly is delicious. Bake potatoe wedges with olive oil salt and pepper and make chilli cheese fries and it is wonderful. I use a cheese sauce or shredded cheese.

God bless and see you soon in the blogging world,
