Succotash tuesday

I started my day thinking it's going to be a busy one. I went to pick up peaches to can but they didn't have any more till next tuesday. So that will be my next wednsday committment. I just felt a little unmotivated so I took it easy. I made a wedding card for my sister-in-law that got married 2 months ago. YES, I KNOW!! 2 months is a little ridiculous, but I had a sick child for a lot of the time and then I lost focus and I really did want to make one instead of buying it because I knew she would appreciate it. That was my one and only check mark for today.

I also got a recipe from my sister yesterday and made it for dinner tonight. It was called pizza squash. It is so easy and believe it or not healthy. It got my kids to eat squash and not realize it.

Here's what you do; slice yellow squash or zuchini in 1/4 inch slices and set aside, then slice some fresh mushrooms and set it aside, next slice fresh tomatoes thin, and an onion and garlic thin. In a deep skillet layer your vegis overlapping your squash. then pour a decent amount of spagetti sauce over the top, 1-2 cups depending on how many squash you sliced. I did 3 8 inch yellow squash and used about 1 1/2 cups of sauce. cover and cook when it is almost done cover with mozzarella cheese. You want you finished product to be tender but not mush. I let it set covered about 5 minutes or so before serving and it was delicous.


We have been eating out on the patio the last couple of nights and grilling ground chuck or turkey and it has been so nice. I told DW that the food just tastes better when I can see the roses.

I am seriously thinking of sending Big Mister to preschool this fall. My time is running out, and I know I found a fantastic program that he would love , but his Mama is not sure she can leave him for a half a day, yet. Pray for wisdom and the the knowledge of what is best.
