I am just kind of working on a little of several things.
First, I am working on a special photo project so I have spent a couple of hours editing pics of the boys and have thoroghly enjoyed it.
In the mean time I have pumpkins steaming on the stove in preparation for canning creamy pumpkin. Yesterday I finished my apple canning, including the apple pie filling. It is quite yummy and was super easy. For anyone interested here is the recipe.
Canned Apple Pie filling
8 cups water
4 1/2 cups sugar
2tsp cinnamin (I used 2 tablespoons)
1 tsp nutmeg
a shake of allspice
1 tsp salt
3 tbsp lemon juice
1 cup clear gel or cornstarch would probably work too.
cook till thick and then add:
28 cups of peeled and sliced apples
cold pack for 20minutes.
I have been e-mailing a few friends and are allready wanting another scrapbooking weekend and we aren't sure if we can go till spring. HMMMM I think we may have to do something about this issue.
