It's finally friday...saturday and sunday.....

When you read this title you need to hum it to the tune of the song 'It's finally Friday'. Although half the weekend is gone, it's all kind of one day to us. It has been so nice to have my husband home last night and today. We went to my in-laws last night and considering where are relationship was at even a year ago, you would not believe what a great time we now have visiting them. The relationship was very strained (to put it mildly) due to the fact they are amish and we are not. Then today we had a family reunion on my father in laws side and we had a great time. I was shocked when my father in law was singing my praises to his brother, but I very much appreciated it. It took a lot of patience and prayer on our part and some humbling on they're part. Big Mister loves his Daudy (grandpa in dutch) and Little Mister loves his Mammie (grandma in dutch). The boys do get a little spoiled with attention when we are with them but that's okay a little extra love never hurt anyone.
I did have my class on thursday night and many of the participants are seeing some awesome results. There are others who are struggling but are not on any of the herbalife supplements or protien shakes. I have tried many many diets and exercise programs and never had results like this and this is why they joined my class but then they think that paying $2.77 per meal is too much. I can't find any other cheaper way of getting a protien packed shake at 31 grams and only 250 calories plus 2 other supplements. Enough about that, the class is very positive and I am enjoying the results and the enthusiasm in the participants.
I am so sorry I have not gotten a chance to visit very much this week, but I swear once canning is done I will be much more attetive. I miss reading up on what your days are filled with.
I have just gotten my issue of creating keepsakes today and am so excited to check it out for more scrapping ideas.

I am just plain tired, but I don't want to whine to much since my husband is much more tired and has been working an insane amount of hours. I picked more beans, summer squash, banana peppers, and sweet corn out of the garden and finished bagging my green beans and put them in the freezer. Grandma had cleaned and cut them yesterday, all 6 gallons of them!
Then I made corn on the cob and sloppy joe for dinner, packed it up and went out to the job site where DW was and we had dinner, then I started hauling shingles for a couple of hours. I left at 8pm to put the kiddos to bed and tidy up a bit.

I recieved a request for my granola ball recipe which I talked about yesterday. It is so easy to make, it literaly only takes 5-10 minutes total.
Granola balls
1 cup all natural peanut butter or cashew butter
2/3 cup honey, agave nectar, or maple syrup
1/2 tsp vanilla
1/2 tsp almond flavoring
1/2 cup raisins or dried cranberries
1/2 cup dark choc chips
1 1/4 cup oatmeal
1/2 cup Herbalife vanilla protien drink mix (60 grams of protien total)
mix wet ingredients first, then add in dry ingredients. Roll into 1 inch balls and refrigerate 1-2 hours before serving. DELICIOUS!
Agave nectar has no glycemic index so your body does not see it as sugar, almond or cashew butter has less calories than peanut butter, and Herbalife's Protien drink mix has lower calories with very little sugar and packed with protien. This is not they're regular shake mix.

Also here is a great recipe for chicken enchilada lasagna that is so delicious and high in protien with low calories. Even my kids love it.

Enchilada lasagna
2-3 cups shredded boneless skinless chicken brest or turkey
2 cups gravy made with chicken stock and a little cornstarch. and seasoned with salt and pepper
1 jar of mild, green chili salsa
1 package whole wheat tortillas (with high protien and fiber and low in calories)
2 cups frozen corn, defrosted
1 can black beans, drained and rinsed
4 to 5 scallions, chopped
2 cups shredded Monterey Jack cheese (or mozzarella for less calories and same great taste)
Preheat oven to 400ºF. In a medium-size saucepot, heat the leftover gravy over medium-low heat. Once the gravy starts to bubble, mix in the jar of green chili salsa. Remove from heat and reserve. Spread a thin layer of the gravy/salsa mixture onto the bottom of a casserole dish. Layer 2 of the tortillas, 1/3 of the corn, 1/3 of the black beans, 1/3 of the scallions, 1/2 of the chicken, 1/3 of the gravy/salsa mixture and 1/3 of the cheese and repeat this process two more times until all of the ingredients are used. Finish with a layer of tortillas, more of the gravy and a final topping of cheese. Place the "enchil-lasagna" in the oven until the cheese is bubbling and brown, about 10-15 minutes. Top with remaining scallions and serve.

Succotash Tuesday!

Okay, Succotash is back this week. Why? Well because it has been a mixture of many things day.

For starters I was so blessed to have my grandma spend the day with me. We started out on the back patio with a great breeze and the boys were playing while we cleaned lots of green beans and lots of beets. We took our time and just enjoyed visiting and my rose garden. Oh that's right I haven't shown you my rose garden yet. Well here are my beauties. And this is only the center of my rose garden. I will take another picture because these bushes have doubled plus I have another 7-8 bushes that aren't in the picture.

Then we had a great lunch with some fresh sweet corn out of my garden and a mixture of other tasty things. Big Mister ate 3 ears of corn. We finished off our afternoon with a great big slice of sweet and juicy watermelon. Since my grandma is amish I had to take her home, not that that is a chore by any means.

We then made a run to our local wal-mart to get a few items with my friend Layla who has another very special date (yeah) tommorrow and is fixing a picnic with my too cute heart shaped picnic basket. we came back and made cupcakes and put Little Mister to bed since it was 8 o'clock and he is so on a schedule. I decorated a special cupcake for my sweetie since he has been working so hard lately and I miss him.

Oh, I almost forgot, we also made these fabulous granola balls for the cookie monsters in my house.

Sunday swimming with Daddy!

Sunday seemed like the most perfect day. We went to church; which I ended up sitting in the nursery through it all since Little mister just would not settle down without me. Then We picked up pizza and went to the beach. DW hasn't been swimming there or anywhere yet this weekend and enjoyed relaxing with the boys and having one on one time with them.

You see I am very colleric (take charge personality) and also very melancholy (organized, anal personality) so I took a picture of how we sit at the beach. I love having all my stuff right by me and have to where I can see the boys without getting up a hundred times.

After the beach we went home and grabbed a quick bite and changed so we could run out to my inlaws for a visit. We hadn't seen them in a good month even tho we only 4 miles apart, we have been so busy this summer and I don't think it's going to slow down. But, thats okay, as long as we are enjoying life along the way.
